What's for Breakfast?

Yesterday morning for breakfast we had Scrambled Tofu (see recipe here), Potatoes O'Brien with Tofurky Kielbasa Sausage, Biscuits and Cashew Country Gravy. Today I want to share with you the recipe for Potatoes O'Brien with Tofurky Kielbasa Sausage!




POTATOES O'BRIEN
serves 6


6-8 medium sized potatoes, scrubbed and cut into bite-sized pieces
2 Tablespoons olive or coconut oil
1 bell pepper, chopped
1 medium onion, chopped
1 package Tofurky Kielbasa Sausage, sliced
salt to taste


Add oil, bell pepper and onion to frying pan and saute for about two minutes. Add potatoes and salt. Cover and cook till potatoes are fork tender. Add Tofurky Kielbasa Sausage and cook uncovered for about 10 more minutes. Serve and enjoy!
