Moroccan Orange-Walnut Salad

I was just going through some of my old recipes and found a recipe I thought was long gone. Whoo Hoo!!! This recipe was given to me in 1983 by a lady who was a friend at the time named Leitha. She and her husband owned the Tell & Sell in Sweet Home, Oregon at the time. Wow! What a blast from the past. I make this salad a lot in the spring/early summer when we have lots of spinach in the garden. Love it!!! I hope you will like it too:)


Moroccan Orange-Walnut Salad


3 large oranges, cut in bite-size chunks
1 Tablespoon honey
1/4 tsp cinnamon


Combine orange chunks, honey and cinnamon in bowl; cover; let set at least one hour.


1/2 pound mixed fresh greens -- I use spinach
1/2 cup walnuts, halves or quarters
1 Tablespoon red onion, thinly sliced
1/2 cup radishes, thinly sliced
1 Tablespoon olive oil (optional--I forgot about the oil and haven't used it for years!)
Salt and pepper to taste


Mix vegetables and nuts together in serving bowl. Chill to keep green crisp and fresh. Just before serving, add oranges, oil, salt and pepper.


An attractive salad, especially nice served in a glass bowl.

Mistaken Identity

Today I went to pick my granddaughter up at kindergarten. It was raining really hard so I got her umbrella out of the backseat and thought I could use it till she got out of school, then she could use it. She loves to use her umbrella:) I opened it pointed away from myself, of course, and put it over my head. I was getting some funny looks from teachers and kids but thought it was because it was a small umbrella. One teacher said, "Cute!" When my granddaughter came out of her class and I handed her the umbrella, I saw what everyone was smiling about--the umbrella has cat-like ears!!! How funny!!!


Then, my granddaughter and I walked to the car, unlocked with the clicker and as I was starting to put her in the car we saw that her booster seat wasn't in the car and as I looked to the front seat I noticed that my purse wasn't on the front seat where I left it. It wasn't our car!!! It was the same color, make and model but was not our car! My granddaughter got the biggest kick out of that and could hardly wait to tell her mom and dad when we got home.

Riding the Rails

I had a wonderful trip yesterday via Amtrak! What a great way to travel!!! We left the Portland Station on time and I arrived at my destination only 1/2 hour late.


My seat mate was a nice woman, mother of three teenaged kids and works at the local school with Native American teens. I think she also coaches the cheerleaders. Across the aisle and up one row was a woman who is a frequent train traveler. I swear she should have been a tour guide. Her seat mate was an older foreign gentleman who spoke very little English. However, our "tour guide" pointed out points of interest and the gentleman was busy videoing the sights. I appreciated the information as I had no idea what we were passing and it made the trip so much more interesting. The woman in front of my seat mate was developmentally delayed and kept asking our "tour guide" when the train would arrive at her destination. The "tour guide" was sooo very patient with the lady and seemed to allay her fears that she might somehow miss her stop. A woman straight across from our row ignored the repeated instruction to take cell phone calls to the vestibule between calls and talked on her cell phone for 1/2 hour in her seat!!! There always has to be one but it really wasn't annoying. It beat the last time I took the train and had a mother with her grown daughter sitting behind me arguing the WHOLE trip!!! Now THAT was annoying!!! 


I crocheted for at least three hours of the trip. Finished a baby afghan for one of my daughter's very special neighbor friends. She is expecting a baby girl in June and already has a super cute and funny little boy who recently turned two.


The weather was perfect--sunny and warm but not too warm! Couldn't have asked for better traveling weather. Now it looks like we will get rain for the next few days--through Mother's Day!


When I arrived my daughter and granddaughter were waiting for me and my granddaughter was sooo excited! She told me this morning that she loves for me to come and is sad when I leave. Warms the cockles of my heart:) My granddog was happy to see me too. She seemed to remember Gramma from when I was here two months ago and wanted LOTS of attention. She is one spoiled dog!!!

Leaving on a Jet Plane--no, make that Train:)

I am leaving today to spend two weeks with my daughter and her family. This time instead of driving I am using Amtrak; leaving from the Portland Station! I think the last time I took Amtrak was three years ago. I do like riding the train and hope to someday take a train ride from Edmonton Canada to Banff. I have heard it is a great ride--lots of great scenery.


Sooo, if my posts are a little more sporadic than normal, it is because I am busy with my darling daughter and precious granddaughter.  However, we could all be surprised and I could post MORE than normal!
