Our favorite breakfast of the week is Sunday! That is the ONLY day I go all out for breakfast--usually just hot or cold cereal and fruit. Yesterday we had what I call Fruit Toast--hubby calls it Fruit Soup--but everybody calls it YUMMY!
This must be one of those dishes that are better in real life as the picture doesn't look particularly appetizing:( The way we serve this is to put peanut butter or almond butter on a piece of toast on a plate or flat bowl and ladle the Fruit Sauce over the top.
I hope you will try this with your family. It is super easy when you have a large group of people to feed for breakfast--and a real crowd pleaser as well.
Fruit Sauce
(I used home canned fruit so will guesstimate for store bought)
1 can pears in natural juice
1 can peaches in natural juice
1 can cherries in natural juice
1 can pineapple chunks in natural juice
1 can apricots in light syrup
3 Tbsp organic corn starch
pinch of salt
Pour all fruit with juice into pan. Cook till boiling. Mix cornstarch in water then add to fruit mixture and stir till thickened. Add pinch of salt, stir and serve. If you want your Fruit Sauce sweeter, add a small amount of sugar or honey--by small amount I mean a tablespoon or two.
NOTE: When I make Fruit Sauce I use a quart of everything except one can of pineapple. For this amount I use about 1/2 cup of cornstarch and about 1/4 teaspoon of salt.
